The SOUL SHINE

1 oz Geneva

1 oz Root Beer syrup 

.75 oz Lemon 

.5 oz Bonal

Shake all ingredients and double strain into a rocks glass over a large ice cube

*Fill the ice mold with ginger zest, half of a lemon wheel and a quater of an orange wheel and let freeze

Top with Topo Chico

G&T of the month: September

1.25 oz Gin

.75 oz Giffards Pampoulmousse 

4 oz Elderflower tonic

Build the cocktail in a coppa glass

Garnish with a grapefruit wedge

Old Fashion

2 oz Bourbon

2 dashes Orange Bitters

4 Dashes Angostura Bitters

2 bar spoons of Simple syrup

Stir all ingredients for 30-45 seconds

Pour over a large ice cube

Garnish with an orange twist 

The Love Below

1.5 oz Bourbon

.5 oz Aperol

1 oz Lemon

1 oz Mango Habanero Syrup *Portland Syrups*

Shake all ingredients 

Double strain into a rocks glass top with bar ice

Garnish with a grapefruit wedge

Tom Collins

2 oz Gin

1 oz Lemon juice

.75 oz Simple Syrup

Shake for 10 seconds

Double Strain into a collins glass

Add bar ice and top with 2 oz soda water

Garnish with a Luxardo Cherry

Negroni 

1.75 oz Gin

.75 oz Camapri

.75 oz Sweet Vermouth

Stir all ingredients for 30-45 seconds

Strain over a large ice cube or serve up

Garnish with choice of grapefruit or lemon twist

MARTINEZ

2 oz Geneva

1 oz sweet vermouth

¾ oz grapefruit liqueur

Orange bitters

Stir, strain, serve up with an orange twist

Mojito

1.5 oz Gin

1 oz Lime

.75 oz Simple 

Large bunch of mint

Gently shake and pour into a coppa glass

Top with 1.5 oz Sparkling White Wine and 1.5 oz soda water

Bitter Gen

1.5 oz Geneva

.75 oz Cynar

.25 oz Fernet

5 drops of Cacao bitters

Stir for 30-45 seconds

Strian over a large ice cube and serve in a rocks glass

Ladies Night

1.5 oz Geneva 

1 oz Aveze 

.5 oz lime 

.5 oz simple

.5 oz Cocchi Americano 

Muddle a healthy amount of cucumber into the shaker tin

and shake ingredients for 10 seconds

Strain into a coupe rimmed with ground pink peppercorns 

Garnish with a cucumber ribbon on a skewer 

Summer Spiced Tea

1 oz Geneva

.75 oz  lemon

.75 oz Townshend Spiced Tea 

.75 oz honey syrup

.5 oz Caravella 

Shake all ingredients and double strain into a collins glass

add ice and garnish with and orange wheel 

Rose City

1 oz Geneva

1 oz Cocchi Americano Rose

3 dashes PDX Rose & Chocolate bitters

1.5 oz Fever Tree Indian Tonic

1.5 oz Topo Chico

Build the cocktail in a collins glass

Garnish with a grapefruit peel

White Sangria

1 oz Geneva

1 oz honey

.5 oz lemon juice

.5 oz lime juice

Shake all ingredients and pour into wine glass

Top eith 3 oz of Vinho Verde

Garnish with a lemon twist

The JUNKO

1 oz Gin

.75 oz Giffards Peach

.75 oz Ancho Reyes

1 oz Lemon

3 dashes Hellfire bitters

Shake all ingredients and double strain into a collins glass

Top with Topo Chico 

Garnish with a slice of peach
